sshfs files-via-proxy:/srv/documents /home/alex/mnt/documents

This assumes files-via-proxy is an SSH host alias already configured for the real file server, account, key and appropriate ProxyCommand helper. The server owns /srv/documents; /home/alex/mnt/documents is the prepared local mount point. The proxy address is neither path.

Keeping the route in the SSH entry lets SSHFS reuse it. Direct SSH-related options are another possibility, but they must match the actual helper's syntax; OpenBSD netcat options are not interchangeable with every netcat implementation.

The proxy account obtains a stream. The file server separately authenticates the SSH user, permits SFTP operations and applies filesystem permissions to the requested directory. Keep its host-key checks enabled.

When the route drops during a mount

A mount can outlive a short command and remain in use by applications with open files. An SSH or proxy interruption may appear as a blocked filesystem operation.

Choose SSHFS's documented reconnection and caching behavior for that workload. Restoring the connection does not make every interrupted write's outcome unambiguous or guarantee that an application handle survives unchanged. Unmount through the normal filesystem procedure when the session is finished.
